Thai Fish Soup

* This is a simple soup that will suprise you with its complex flavors.
* This recipe calls for fish only but feel free to add any other seafoods you like for variety!

Ingredients

* 8 cups fish stock (we carry this or make your own)
* 2-13.5 ounce cans coconut milk (you can use lite coconut milk)
* 1 cup fresh lime juice
* 1 cup fresh cilantro, chopped
* 1 cup green onions, sliced thin
* 1/2 cup fresh ginger, peeled and finely chopped
* 1/2 tablespoon fresh garlic, chopped
* 1/2 cup thai fish sauce
* 3/4 cup red pepper, chopped
* 3/4 cup yellow pepper, chopped
* 2 tablespoons lemon zest
* 2 tablespoons lime zest
* 1 tablespoon sriracha hot sauce
* 2 pounds firm fish, skinned and chunked, such as halibut, snapper, marlin, or tilapia (most fish or seafood will work in this recipe)
* 1/4 cup fresh cilantro, coarsly chopped

Directions

* Bring fish stock to a simmer, add all other ingredients, except the fish and 1/4 cup cilantro. Bring back to a simmer. Cook for about 5 minutes. Add fish and continue to simmer for 8 to 10 minutes. Add cilantro,
* This recipe serves 8 to 10 hungry people.
