Temari Sushi

* "Te" means "hand" and "Mari" means "ball". These cute little balls of sushi are simple to make and the varieties are totally up to your imagination.
* Temari make great appetizers or even colorful accents to other dishes.
* It's also a great way to use up those small extra pieces of fish or vegetables.

Ingredients

* sushi rice
* fish, fruit, or vegetables, sliced thin, 1 1/2 inch squares
* fresh chives, chopped, sesame seeds, teriyaki sauce, and tobiko for garnishing
* plastic wrap 8x 8 inch squares
* your imagination...

Directions

* Prepare a bowl of water that is about 30% rice vinegar for moistening your fingers..
* Put down the sheet of plastic.
* Using about 1 1/2 tablespoons of rice, form a ball.
* Lay your fish or vegetable on the plastic and set the ball of rice on top. now pull the corners together to form a bundle and twist tightly. Unwrap the plastic and there you have it!
