Marlin Burgers with Cambozola Cheese and Grilled Spicy Apples

* These burgers are great for any occasion, from tail-gating to a formal dinner. They are best grilled but you can either pan saute or broil them.
* The creamy cambazola cheese with the spicy apple adds a new dimension to an already great burger.
* Salmon or tuna can be substituted for marlin if you wish.

Ingredients

Burgers

* 2 pounds marlin, coarsely hand chopped
* 1/2 pound cambazola cheese, rind removed, cut into eight pieces
* 3/4 cup red onion, finely chopped
* 1/2 cup yellow pepper, chopped
* 1/2 cup panko bread crumbs
* 1/4 cup fresh garlic, chopped
* 1/4 cup flat leaf parsley, chopped
* 1/4 cup ketchup
* 2 teaspoons kosher salt
* 1 teaspoon black pepper
* Rye bread (or the rolls of your choice)

Spicy Apples

* 3 cups tart apples, sliced in the round and cored, about 1/4 inch thick
* 1/3 cup honey
* 2 tablespoons sriracha
* 2 tablespoons canola oil
* 1 teaspoon salt

Directions

* Combine all ingredients except the cheese with the chopped marlin. Mix well.
* Form into 16 patties, oblong and flattened, with a depression in the middle of each. Mold each piece of cheese to fit in the depression of eight of the burgers. Cover each of the cheese filled burgers with the remaining eight pieces and seal the edges. This will give you eight burger about 6 to 7 ounces each. Leave these at room temperature for about 30 minutes prior to cooking.
* Toss the slices of apples with honey, sriraca, oil and salt. Let sit for a least 15 minutes. On a hot grill, cook apple slices for a one minute per side
* Grill the burgers over a hot grill for about 5 minutes per side.

* Lightly grill the rye bread, add the burger and top with apples.
* Serves 8 people. Enjoy!
