"Light" Crab Bisque

* This recipe uses rice as a thickening agent, replacing most of the butter,cream, and flour in a traditional bisque.
* You can use whatever seafood you like, crab, shrimp or lobster.

Ingredients

* 6 cups fish stock (available @ Dirk's)
* 4 cups shrimp or lobster stock( available @ Dirk's)
* 1 cup canned diced tomatoes
* 1 cups onions, chopped
* 1 tablespoon butter
* 1/2 cup arborio rice
* 2 pounds crab meat (use clawmeat or "special" crabmeat for the most economical choice).
* 1/2 cup heavy cream
* 1/2 teaspoon cayenne pepper
* 1 teaspoon sriracha hot sauce
* 1 teaspoon salt
* 1/4 cup of white wine

Directions

* Saute onions in butter until tender, about 4 to 6 minutes.
* Add diced tomatoes
* Add both stocks to pot and bring to a simmer.
* Add rice to stock mixture. Stir and continue cooking on medium heat until rice is tender.
* With a stick blender, puree mixture.
* Add all other ingredients to pot. Stir and bring back to a simmer..
* Serves 8 to 10 people
* Cooked lobster or shrimp work equally well with this recipe.
