BBQ Corvina Poor Boys with Cajun Mayo

* This sandwich can be made with any type of firm fleshed fish, such as grouper, snapper or even tilapia. We like the mild and firm flake of corvina best though.
* A fresh soft crusty french bread works well for this sandwich.
* This wet rub works well on almost any piece of grilled or broiled fish.

Ingredients

Wet BBQ Rub for Fish

* 1/3 cup extra virgin olive oil
* 1 tablespoon fresh garlic, chopped
* 1 teaspoon smoked paprika
* 1/2 teaspoon cumin
* 1/2 teaspoon black pepper
* 1/4 teaspoon cayenne pepper

* 2 pounds fresh corvina, skinned and cut into 6 ounce pieces.

Cajun Mayo

* 1/4 cup canola mayo
* 2 tablespoons ketchup
* 1 tablespoon sriracha
* 1 teaspoon fresh garlic, chopped
* 1/2 teaspoon smoked paprika

Directions

* Mix all ingredients for rub together in a ziplock bag. Add fish and massage rub onto fish through the bag. Marinate for about 45 minutes at room temperature.
* Mix all ingredients for cajun mayo together in a small bowl and set aside.
* Grill fish on high for about 4 to 5 minutes per side until done.
* Spread mayo on bread, add fish and top with spicy slaw mix.
* Serves 4 to 5 people. Enjoy!
