Savory stuffed artic char on a cedar plank

* Almost anything on a cedar plank is good but this recipe takes it to a new level. Savory herbs, asparagus, and creamy carambozla cheese, yum!
* Arctic Char is similar to salmon with a milder flavor and a high fat content that makes it a perfect fish for smoking on a plank.

Ingredients

* Asparagus and Carambozla Cheese Stuffing
* 1 cedar plank, well soaked
* 3- 1 pound Arctic Char fillets, each skinned and cut with a pocket for stuffing (We will be happy to do this for you)
* 2 tablespoons olive oil
* 1 tablespoon herbed sea salt

Directions

* Make stuffing recipe. Fill pockets in fish with stuffing.
* Grill should be hot.
* Place stuffed fillets on the wet plank, brush with olive oil and lightly sprinkle with salt. Lay plank on the grill. Close the lid. Fish should cook for about 16 minutes. I usually peek about halfway through just to check that the plank is smoldering nicely. If you wish to use a thermometer, the temp should be about 140 degrees in the thickest part of the fillet when done.
* Using a spatula, slide fish off the plank onto your serving dish. Serve with the side of your choice.
* Serves 6 to 8 people. Enjoy
